                                          Interesting test, I use cheesecloth to dry age beef, just change it out every few days, works like a charm every time. I generally do it once a year for reverse-seared prime rib, bake @ 200F until 120F internal, tent and rest for 1-2 hours, then roast at your ovens' highest setting for 10-15 minutes to finish. Beef butter. Learned the aging tip from Guy Fieri on his Big Bite show and the reverse sear is Alton Brown's from his latest Good Eats: Reloaded.

                                                      Hey Guga what is better normal sear or reverse sear for dry aged beef just put a strip loin in umai bag so I have around 6 to 7 weeks to find out usually do normal sear then finish over low heat. Would love your thoughts on this really enjoy the aging and tenderizing videos like the experimenting.
